Monday - Herby Slow Lamb
It’s one pot season! Actually, that’s me all year round! All you need is a chunk of meat, a bunch of veggies, 2 tablespoons of Secret Spice and liquid - tomatoes or water does just fine. Add a teaspoon of salt if you haven’t used a Salt Bomb or try combining any Salt free blend with a salt bomb and you’ve got a whole new flavour combo right there.
As a rule of thumb, I go with 1 tablespoon of spice, 1 teaspoon of salt per 500g of meat. But tread carefully to start with. If combining a salt bomb with a salt free blend use a 50/50 combo and don't add more salt until it's cooked enough to taste it.
Veggies and sauce will always water it down and cooking for longer will concentrate the salt and spice as the liquid evaporates. MORE HOT TIPS
Tuesday - Sweet & Sour Chicken
I refuse to buy stir fry sauces so have come up with a few pantry staples that make a nice sauce and this is one combo I've been playing with.
- 1/2 cup of tomato paste
- 1 tbspn rice wine or apple cider vinegar
- 1/3 cup organic Tamari
- 2 tspn rapadura sugar
- 2 tspn Sweet Spice, Garlic Pepper or Chilli Garlic (or a combo)
- 1/2-1 cup chicken broth
Do your usual combo of finely sliced veg and chicken and stir fry them separately then put them all together and add this sauce.
When everything is cooked enough and tastes good, add 2 tbspn tapioca or organic cornflour mixed in cold water for thickening if you like a lot of sauce.
Wednesday - Sneaky Tuna Mornay
This is the best budget buster to have under your belt! I simply make the cauliflower mash with a big spoonful of Herbalicious or simply Garlic Pepper Salt and thin it out to a bechamel sauce consistency.
Add some grated zucchini, peas, capsicum - anything you can finely chop. Big tin of tuna (always in the pantry) some gluten free pasta and cheddar cheese in the sauce or bake on top if you tolerate it.
Juice a couple of lemons and add it to the sauce at the end and you have a pleasing filler when the wallet is empty.
Thursday - Mexican Burrito Bowls
Quick, cheap and easy enough that an 8 year old could do it! Simple chopped salad, maybe some organic corn chips or load up a GF Wrap

If you have nothing much then a nibble board is a tasty way to use up bits and pieces.
Otherwise, the beauty of one-pot meals is that you can load them up and have them in the freezer for a rainy day.
Even if there’s only enough for one, don’t let it go to waste by getting pushed to the back of the fridge!
