Empty the veggie bin with this quick cook up. Cooking time may be a little longer but it’s set and forget leaving you time to do other things - coz you know, there’s other things you could be doing!
Suitable for any of the Secret Spice Co range. Mix and match the sauce or keep it all the same.
Makes 1 loaf and 6 big, meaty muffins. The loaf is enough for 4 hungry people and the muffins pack nicely in the lunch box for the next day.

Ingredients

1 carrot
- 1 stick of celery
- 1 small zucchini (or any other veg - mushrooms, pumpkin, capsicum…)

1-2 tbspn Secret Spice Co Tagine

1 tspn Unrefined Salt
- 3 tbspn psyllium husks, flaxmeal or almond meal
- 800g beef or pork mince or mix of both
- 2 eggs, whisked
- ½ cup broth
- 2 tbspn olive oil

¾ cup passata (tomato purée)
- 1 tbspn honey

1 tbspn Apple Cider Vinegar

½ tspn Secret Spice Co Smokin’

Directions
Preheat the oven to 180°C
- Roughly chop the vegetables and place into a food processor with the spices, salt and psyllium husks. Pulse to chop small (or hand chop finely).
- Add the mince, eggs, broth and oil. Massage with your hands to combine well.
- Press into a lightly greased loaf or muffin tin
- To make the sauce, place all ingredients in a saucepan on a low heat until combined.
- Spoon half the sauce over the loaf or muffins and place in the oven.
- Muffins take 25 minutes and the loaf takes 50 minutes.
- At the half way mark, spoon the rest of the sauce over the loaf or muffins.
- Cool in the tin for 10 minutes before serving.
- Serve with mash and salad or vegetables.
Recipe Note
Options:
Add 80-100g livers to sneak in some extra nutritious food.
Line the loaf tin with bacon rashers leaving enough overhanging to fold over the top before coating with sauce. Similarly, the muffin tins could be lined around the outside with bacon.
