Chicken Gyros

Zero Fuss! Oh and you can switch out Lemon Pepper for any other Secret Spice Co Blend to make it same same, but different!
Make two towers if you have more mouths to feed. I made two using 1.5kg of chicken and fed 6 people (4 men and two ladies mind you!)
Ingredients
Marinade for every 500g Chicken Thighs

1 tablespoon of Lemon Pepper Salt
- 1 tablespoon of Olive oil
- 1/2 tablespoon Lemon Juice or Apple Cider Vinegar
Other Ingredients

2 large dutch cream potatoes (any yellow flesh) Extra if you like
- Water or stock
- Extra Lemon Pepper to sprinkle
Directions
Mix together and Marinate for 30 minutes but longer is better
- Cut potatoes in half longways
- Grease an oven dish and place them cut side down next to each other
- Put two bamboo skewers into the potatoes pointy side up
- Layer the chicken thighs on top of each other anchored by the skewers
- Sprinkle with extra Lemon Pepper and pour a centimetre or so of water or stock in the base
- Bake at 180C for one hour or until cooked inside (70-75C)
- Pull the chicken off the potatoes and lay on it's side (rest it if you're patient enough)
- Slice it thinly, leaving the skewers in place (cut either side of them)
- Serve with all the gyros trimmings in a wrap or a bowl
- Tztatziki, lettuce, tomatoes and airfryer fries (15 minutes 200C)
