Delhi is our take on a classic butter chicken-style seasoning, made for everyday meals that feel anything but ordinary. Whether you're roasting veg, simmering chickpeas, or flavouring grilled chicken, this one delivers serious comfort and curry-style flavour, fast.
Ingredients
-
500g chicken breast or thigh, cut into chunks
-
3 tbsp Secret Spice Deli
-
1 tbsp olive oil or ghee
-
1 onion, finely chopped
-
2 garlic cloves, minced
-
1 cup passata or crushed tomatoes
-
1/2 cup plain Greek yoghurt (full-fat)
-
Salt to taste
-
Fresh coriander (optional)
Directions
Toss chicken with 2 tbsp of the spice blend and a splash of oil. Let sit for 10–15 mins (or longer if you have time).
In a large pan, heat oil. Sauté onion and garlic until soft and fragrant.
Add marinated chicken and cook until browned on all sides.
Stir in passata and remaining 1 tbsp of spice blend. Simmer for 10 minutes.
Reduce heat to low. Let the pan cool slightly, then stir in yoghurt gently. Warm through without boiling.
Top with coriander and enjoy with rice or naan.
Recipe Note
Top with coriander and enjoy with rice or naan.
Always check for salt as you go. Don’t add too much, you can add it in but you can’t take it out!!
