There’s nothing better than a little nest of mash to sop up the juices of your slow cook or grilled meat, fish or veg.
Ingredients

750 grams cauliflower, chopped in florets
- 100 grams leek, sliced, white part only
- 50 grams ghee or butter
- 150 grams coconut cream, stock or a mix of both

1 teaspoon of Herbalicious
- 1 teaspoon salt
- fresh ground pepper
Directions
Thermomix Way
Chop any extra ingredients, like parsnip or celeriac, spd 4 for 5 seconds
- Chop cauli on spd 4 for 5 seconds
- Add all other ingredients and cook at spd 1, Varoma, for 20 minutes
- When cooked, slowly increase the speed to 8 for 30 seconds ensuring the lid and cup is securely in place.
Old Fashioned Way
- Add all ingredients into a pot on a medium high heat and bring to the boil
- Reduce the heat to medium low heat and simmer for 20 minutes until soft
- Blend with a stick mixer or food processor until smooth and creamy being very careful of hot splatter
