Cauliflower Rice

This Cauliflower Rice is so simple and easy to make!
Use it to bulk out the veg when you're falling short and to soak up the sauce when you would normally have rice.
I've used Tagine here but you can match the spice to your meal with any of the blends or just use Garlic Pepper Salt and let your curry or stir-fry do the talking!
Ingredients

1 whole cauliflower (approx. 800g) Chopped into florets
- 2 tbspn coconut oil

1-2 Teaspoons of Tagine
- Salt and pepper to taste
Directions
Place florets into food processor and pulse 6-8 times until evenly chopped (Thermie 5 sec, spd5)
- Melt oil in a large based pan or wok on a moderately high heat
Add the cauliflower, spice and salt and stir fry for a few minutes until tender but not too soft.
- Serve as you would any other rice.
Recipe Note
OPTIONS:
- Fry an onion, a garlic clove and some ginger before adding the rice.
- Choose any of the spice blends to make it match your main dish.
- Fry off some vegetables, bacon, before adding the cauliflower, add a chopped omelette and a tablespoon of Tamari for fried rice.
