Monday - Smokin’ Ratatouille with Crispy ChickenYep, I’ve hit repeat from last Monday! Same ingredients, different flavour! That’s why I can’t live without my spices and neither can you!
ICYMI here’s’ how it goes:
All I do it blitz an eggplant, zucchini, onion, mushrooms and any other random veg floating around. Then I saute it slowly until it breaks down into a thick and chunky sauce. I add tomato paste or you can use fresh tomatoes too. Smokin’ was the flavour this week and I made crispy chicken using the method here. Yes we had crispy roast potatoes again!
Tuesday - Rendang Style Beef & Savoury Pancakes with Smashed cucumber saladCabbage Pancakes (aka Okonomoyaki) is a great replacement for rice when you fancy something different. Of course I put spice in them to match the rest of the meal. Delhi was the flavour of the day! They are so tasty it’s freaky because when you make them, they look very unappetising! They are great cold the next day too. (I'll rustle up a recipe for you one day)
Smashed cucumber salad - Yup this one was very nice but the smashing is just a load of hoo-ha I think some Instagrammer made up! Lovely dressing of sesame oil, rice wine vinegar, honey, tamari, fresh garlic and spring onions. Simple and good.
Wednesday - Pesto Pasta with Chicken
Yes another repeat from last week! It was my carbonara style sauce from last week with an organic red pesto from the local shops. I pan fry off the chicken and add Herbalicious and ample Garlic Pepper Salt. Then some veggies like beans, red capsicum, onion, mushrooms and zucchini - any of the quicker cooking veg are nice. I add a little stock and the pesto to make a sauce and loosen the scrappy bits on the pan.
Once the pasta is cooked, I toss it all together and remove it from the heat. In a bowl on the side I whisk 4-6 eggs (depending on how many mouths to feed) and ½ cup or so of finely grated parmesan. Pour it over the chicken and veg and quickly toss and turn it through so the egg doesn’t scramble. As the sauce warms it becomes creamy and silky and ready to devour.
Thursday - Jacket Potatoes with Mexican Mince (and all the trimmings)
Somewhat of a carb heavy week this week! I have 3 grown men to feed but I don’t necessarily eat all the heavy stuff and neither do you! You can take this mince recipe and make Shepherd’s pie, lettuce cups, stuffed pumpkin or capsicums - endless options.
This is the laziest meal going around! Brilliant for a Thursday to empty the veggie bin before the weekend refill at the markets. I blitz any random veg in the Thermomix and chuck it in a big castiron pot with 1kg of mince, jar of organic passata, Herbalicious and Smokin’ tonight with some black beans. It bubbles away while I write this email!
Scrubbed white flesh potatoes sit in a 180C oven doing their thing for an hour - bang it up to 220C for the last 15 minutes to get that crunchy skin. Served with Garlic Pepper salted butter, coleslaw, grated cheese if you fancy and a dollop of organic natural yoghurt.
Friday - Scraps!!
Out and about tonight so the big pot of Mexican mince will be turned into something else!
