Throw together meals can turn out THE BEST!
Have you ever found yourself staring at the fridge and have no clue what you're going to cook? That was me this week! OMG it took me ages to get my thoughts together. I started cooking and chopping random things without knowing where it was going.Β
That's why I'm putting these Weekly Meal Blogs together for you. So you have something to refer back to when you're stumped. There are now 12 of them hanging out onΒ here when you need them.
Check out Tuesday's meal - it may not look pretty but my gosh, it was tasty!
Monday - Steak & Pepper Sauce

Steak and Veg with Pepper Sauce - no words needed! Making gravy when you donβt have pan juices means you donβt have the traditional colour youβd expect, but the flavour is outstanding.
Simply heat a pot of chicken broth and add 2 teaspoons of Garlic Pepper and a sprinkle of Herbalicious.
Let it simmer to infuse for a bit then take an emulsion of tapioca flour and cold water - if you donβt mind gluten, then make a roux of butter and spelt flour before slowly whisking in the stock. Itβs more creamy looking and you can make it as thick as you like.

Tuesday - Creamy Chicken Bake

This was a train wreck that corrected itself - thankfully!
I chopped chicken breasts into chunks so theyβd cook quicker. Made a batch of Cauliflower puree then didnβt know what to do next! Think girl!
So I took some chopped cabbage in a baking dish, laid the chicken on top, seasoned and tossed with Texan BBQ and baked for 10 minutes at 180C.
I poured over the cauli puree, topped with cheese and finished it off! Served with steamed veg - it was the best chicken recipe I had done in a while - random but so good.

Wednesday - Smoky Beef Bowls

Smokinβ Spice turns up every week. This time I slow cooked diced chuck steak, 2 tablespoons Smokin' with a bundle of blitzed up vegetables and a splash of water.
Simmered gently for 2 hours then took the lid off to thicken. Added Β½ cup of tomato paste - extra Smokinβ and salt to taste.
Served with typical Mexican sides like guacamole, Smokinβ Salsa and salad. Oh and some organic corn chips for dipping!

Thursday - Leftovers

I always make sure that at least two of my weekly meals are double batched so I can freeze, reinvent or reheat another night.
Cook once, eat twice, or thrice they say!
Turn it into something else or just eat it as is.
Save your energy for something else - like a late afternoon walk when the mornings have been so dark and cold.

Friday - You may have noticed, I rarely cook on a Friday.

Thereβs next to no-one home so we pick at whatβs in the fridge or find ourselves somewhere else.
So this week I thought Iβd share my popcorn recipe with you! Iβve tweaked the way I used to do it and updated the recipe because this works a charm! Sweet or Salty Popcorn can be enjoyed instead of potato chips without any guilt or $6 blown on them. Texan BBQ makes a ripper batch too.
