Eggs pack a punch when it comes to finding a nourishing source of quality and easy to digest protein. The yolk is loaded with B Vitamins, Omega 3’s, zinc, fat soluble Vitamins A, D, E and K, bioflavonoids, powerful antioxidants, phosphorous, selenium, calcium, zinc iodine, sulphur and choline.
Having a meal that has healthy protein and fats, keeps you fuller for longer and stabilises blood sugar levels. Why do we love that? Because then, you won't be reaching for that unhealthy snack a couple of hours later!
My theory on spending more on your eggs is this. Standard "free-range" eggs may cost around $5-7/dozen and organic may be around $12/dozen. Ridgy-didge free range and organic means the chooks are healthier, the nutrients are higher and you're nourishing yourself with the good stuff.
Plus you're supporting sustainable farming practices that don't use antibiotics or chemicals.
If you're having 2 eggs as part of your meal, alongside vegetables or salad, that's only $2 for your protein portion making it still a very cheap meal. Stock standard "free range" are often produced in not so desirable conditions for the little critters as it sounds so make the best choice you have available to you. Embrace the googy egg and add whatever you like to it, any time of day!
