Is time your worst enemy when it comes to getting good food on the table?
It's the biggest excuse I hear, that's for sure.
This recipe is very time efficient and gives you a boatload of food to save for a rainy day or pump out at lunchtime.
While it's simmering away you could have a shower, a cup of tea or even do some prep for the next day - like bang your slow cook ingredients together for the next morning. Now that's efficient!
Ingredients

1 zucchini, diced
- 1 eggplant, diced
- 1 red capsicum, diced
- 2 brown onions, diced
- 2 cups of diced mushrooms
- 400g of diced tomatoes
- 1 kg of lamb or beef mince

2 tablespoons Smokin’
- 2 1/2 teaspoons of unrefined sea salt

2 tablespoons of Herbalicious (in place of Smokin’)

OR 2 tablespoons of Delhi

OR 2 tablespoons of Tagine
Options to change the flavour
Directions
Add a teaspoon of coconut oil or ghee to a large pot over a medium high heat
- Add the mince to the pot and break up as it browns.
- In another large pot, add a tablespoon of coconut oil or ghee over a moderately high heat and pop each vegetable in the pot as you chop it starting with the onion first.
- You can throw this all together in one pot, but the flavours are enhanced by frying it off like this before the juicy tomatoes are added.
While the pots simmer away, start preparing a pot of Cauli Mash
- As the pot of veggies start to soften and wilt down, add the spice mix or the individual spices and garlic.
- When the liquid has simmered out of the mince, add it to the pot of veg and stir to combine
- Add the salt and the tomatoes to the mix
- Turn the oven onto 180C
- Stir and allow to simmer for a few minutes before tasting.
- Add a little more spice or salt if it doesn't quite taste amazing.
- Everything you make can taste amazing with the right amount of salt and spice!
- Once you're happy with the flavour, pour it in a baking dish and top with the creamy mash
(Or just plonk it all on a plate and have it how it is)
Dress it up with some fork squiggles and sprinkle a little paprika on top. (add grated cheese here if you do dairy)
- Bang it in the oven for 15 minutes to warm through if it needs it.
- Serve with some steamed broccoli or your fave greens
- This makes enough for 4 people twice or 4 people and a few lunches or separate into individual serves and freeze for that "really can't be fluffed" day.
Recipe Note
NOTES
- Swap out the veg for whatever you have floating in the fridge.
- Leafy greens are good too.
- The mushies really make this amazing.
- If you don't have these spices then the good old mixed herbs work too. Start with 2 tablespoons.
- Try and add some greens to have on the side, but it isn't the end of the world if you don't coz it's pretty veggie-fied already. The more the merrier though!
