Choose the right recipe for the amount of time and energy you have on each day and ALWAYS cook more than you need.
Monday - Pan-fried Lemon Chicken with fetaChicken breasts are cheap, but man, can they be easily overcooked and bland if you don’t treat them right! I halved the breast so they’re more even - pound them if you need to.
- Sprinkle with Lemon Pepper Salt
- Pan fry until not quite cooked, but golden, and set aside.
- Add ½ cup of stock or water to loosen the pan juices
- Add cooked, diced potatoes.
- Add the chicken back to the pan to warm through and most likely has finished cooking while it sat (but check).
- Serve with greens & crumbled feta.
Tuesday - San Choy Bau
This is like savoury mince with Asian flavours. Add any diced veggies you have floating around.
Aroma Spice (formerly Sweet Spice), Garlic Pepper or Chilli Garlic Salt and some Tamari or fish sauce are the key ingredients.
Add some stock, maybe some tomato paste and you’re done! Serve with cos lettuce leaves.
Wednesday - Herbalicious Lamb Stew
If you cut your lamb small, it will cook quickly. I’ve used boned leg here and diced it myself (cheaper). Swap for any Secret Spice Co blend!
- Add a tin of tomatoes,
- 1 tablespoon Herbalicious per 500g
- 1 tspn of salt.
- Cook for 60-90 minutes (oven 170C) then simmer with the lid off to thicken the sauce if you like
- add ⅓ cup of tomato paste to make it richer and thicker
Thursday - Seafood Carbonara
- Dice mixed seafood like fish & calamari
- Pan fry in Garlic Pepper Salt. Set aside.
- Pan fry some vegetables like snow peas, capsicum, broccolini and spring onion (quick cooking veggies).
- Take a splash of chicken stock or water to loosen the pan bits then add it all back in.
- While this has been cooking you’ve cooked your pasta and whisked 6 eggs in a bowl (for 5- 6 people).
- Take the pan off the heat and fold through the eggs until they’re creamy. That’s it!
