If you have time, then use bone in thighs or Marylands. You’ll get a more complex flavour and all the nutritional benefits that come from the bones. Add chicken broth or filtered water to create more sauce for the chicken to cook in.
Breast would only work here if you cooked the sauce and added the diced chicken to just poach in the sauce gently without boiling it too hard.

Ingredients

500g chicken thighs, diced
- 1 tbspn Secret Spice Co Tagine
- 1/2-1 tsp unrefined salt
- 400g tomatoes, diced

½ cup of Chicken stock or filtered water
- 1/2-1 tbspn honey
- 400g chick peas
Directions
Add all the ingredients except the honey and chickpeas to a pot on a moderately hot heat
Simmer, stirring occasionally, until the chicken is cooked
- Add the honey and chickpeas and warm through
- Taste for salt and spice and add more if you need more flavour
- Serve with Quinoa and Roast Pumpkin & Tagine Roasted Cauliflower
