Smokin’ Chicken with Black Beans

I'm a lazy cook so don't brown my meat first!
You can if you like, and it probably does add a little something extra. You choose!
If you like it thicker then add tomato paste instead of the diced tomatoes. Then you could whip up some GF wraps for Taco Tuesday/Anyday!
Ingredients

500g Chicken thighs, diced
- 400g tomatoes, diced

1 tablespoon Secret Spice Co Smokin’
- 1 teaspoon unrefined salt (Himalayan)
- 400g tin of organic black or kidney beans, rinsed
- Optional: Finely chopped mixed vegetables
Directions
Combine all ingredients in a heavy based pot on a medium-hot stove and bring to the boil stirring frequently
Turn the heat down. Simmer for 15-20 minutes until chicken is cooked through
- If a thicker sauce is preferred, simmer with the lid off until the liquid reduces or add 1-2 tablespoons of tomato paste
- Taste for salt and spice.
- Serve with a salad and black rice is nice or your usual Mexican sides
