Best bit is, it freezes perfectly so pop it into little jars and pull them out when you need them.
Ingredients
- ½ cup ghee, coconut oil or butter
- 500g pasture raised chicken livers - or a combo with duck is sublime!

1/3 cup of chicken broth or white wine (filtered water works too)
- 2 tbsp apple cider vinegar

1 tablespoon of Herbalicious, Delhi or Tagine
- 11/2 tspn unrefined salt

½ tspn cracked black pepper (optional)
Directions
Clean and trim the livers of sinew then chop them in half
- Brown the livers in a pan with 1-2 tablespoons of ghee in batches
- Add remaining ingredients and cook for a few minutes
- Pop in the food processor or blender on high speed until smooth.
- Pour into separate glass jars and eat within 3 days.
- Freezes well.
Thermomix
Clean and trim the livers of sinew then chop them in half
Add all ingredients to the Thermomix bowl
Cook on Varoma, speed 1-2, 5 min 30 sec
Slowly increase speed to 8 until smooth (approx 45 sec)
