Ingredients

6–8 slices good-quality ham

1-2 medium zucchini, grated and squeezed

2 tbsp milk or coconut milk

Directions
Preheat oven to 180°C (350°F) and grease a muffin tin. Line each cup with a slice of ham.
Mix filling: In a bowl, whisk eggs, milk, and spice blend. Stir in zucchini, mushrooms, and cheese.
Bake: Spoon mixture into ham cups and bake for 18–22 mins, until set and golden. Cool slightly before removing.
