Herby Soothing Chicken Soup

Soothing to the gut for a boost in immunity that we all need!
Use any Secret Spice Co blend to change the flavour each week.
Ingredients

2 large carrots diced
- 2 sticks of celery, diced
- 2 brown onions, diced
- Half a bunch of leafy greens like silverbeet, shredded
- 1 whole chook or 6-8 drumsticks or bone-in thighs

2 tablespoons of Secret Spice Co Herbalicious
- 2 teaspoons of unrefined salt
- 1 litre of filtered water
Directions
Heat a tablespoon of ghee or lard in a heavy based, large pot on a moderate heat
- Brown the chicken pieces, if you have time, for a bolder flavour.
- Toss the veggies in the pot as you chop them starting with the onions and carrots as they take longer to cook. Push the chicken to the side so you can stir the veggies as you add them.
- If you have a whole chook (cheapest way) then you’ll need to chop it up or use a deeper stock pot and leave it whole.
- Add all the ingredients to the pot adding enough water to just cover the chicken
- Simmer for 45 minutes or until chicken is cooked through
Gently remove the chicken and pull the meat off the bones.
Bag the bones in the freezer to make a pot of broth when you have a good collection.
- Shred the chicken and put it back in the pot.
- Taste for salt and add more herbalicious-ness if you need.
