Herby Feta Stuffed Chicken

This chicken breast stuffed with feta and other goodies has become a family fave. Make it up in around 10 minutes which is an awesome job to get done first thing in the morning if you need to.
Ingredients

4-6 free range chicken breasts
- 4-6 rashers of bacon
Stuffing
-
200g feta cheese ( I use greek feta approx 1 slab)

1 tablespoon of Herbalicious or Lemon Pepper Salt Bomb
- 2 spring onions, roughly chopped
- Freshly ground pepper
Options
- Add extra veg to the stuffing like spinach and mushrooms.
- Pesto is also Ah-mazing!

Any other spice blend!
Directions
Preheat the oven to 180°C
- Pop all the stuffing ingredients in a food processor and blitz until creamy and smooth
- Butterfly the chicken as shown in the video below
- Spoon the mixture onto one side of the breast
- Fold the other side over the stuffing
- Wrap with a piece of bacon (or not!)
- Place each breast in a greased oven dish but not too tightly as this will increase the cooking time.
- Drizzled with a little olive oil to moisten the bacon
- Cook for 30-35 minutes depending on the size of the breast
- Check by cutting open the largest breast and checking for raw meat.
- Serve with steamed veg and pour over the scrummy juices from the pan
