Herby Meatball Soup

Herbalicious, Meals
Hearty and warming like any good soup. The perfect way to use up and pile in any veggies you fancy. Gut healing broth is always a bonus and makes for a super tasty feed.

Ingredients

1kg of beef or pork mince - a combo is nice
- 2 teaspoons Himalayan or unrefined sea salt
1-2 tablespoons of Herbalicious or Smokin’ (any SSC blend really!)

1 teaspoon of ghee, coconut oil or lard for frying
1 large brown onion
- 2 carrots, finely diced
- 2 sticks of celery, finely diced
- 1 medium zucchini, finely diced
- 6 cups of chicken broth or water
1 tablespoon of Herbalicious
Unrefined salt to taste

Use any vegetables up to 4-6 cups diced
Add an egg and 1 cup grated vegetables to the mince for extra boost and moisture.
Directions
- Place a large heavy based pan onto a moderate heat.
- Fry the onion in your preferred cooking fat, stirring occasionally
Meanwhile, sprinkle the salt and Herbalicious over the mince
- Get your hands dirty by squeezing the mince and herbs firmly through your fingers until all the spices have been mixed through.
- Roll and squeeze into well formed golf balls and pop in the pot pushing the onion out of the way
- Brown the balls all over (not essential, but tasty!)
- Add the finely diced vegetables
- Pour over the broth or water and loosen the meatballs from the bottom
- Allow to simmer until the meatballs float to the top (20 min or so)
Simmer gently until all the veg have softened and the flavours have developed to your liking
- Taste for salt - you may need another teaspoon depending on if your broth is salted or not.

Note that lean mince, like game meats will be drier and firmer. Add extra veggies as above.
Don't simmer for too long as the moisture and fat will be drawn out.
