Here goes what we did this week in Kimberly’s Kitchen!!
Monday - Thai Green Curry with a Twist
We do love a Thai Green Curry and it's the only thing I make regularly that doesn't contain any Secret Spice Co!
But....we do have Garlic Pepper and Chilli Garlic sitting on the table as a booster for those that need it (more chilli anyone!?)
What's different? I blitz up any and all vegetables that I have to make it boosted without too many people kicking up a fuss about what's in it.
This time I have blitzed a heap of cauliflower and mushrooms (hence the more brown, than green, sauce). Not everyone likes these in chunks but know no different when I do it like this.
P.S. Choose a Green Curry paste with no additives or flavourings - canola oil free is ideal.
Tuesday - Roast Leg of Lamb
We don't save a roast until Sunday! Cook a big one or two so you can freeze one and create something new another day.
This was a traditional Herbalicious lamb to be shared with the in-laws. The
gravy is made out of the pan juices and was D-vine!
Baked potatoes, roast pumpkin and steamed broccoli, carrots and cauliflower. When you have a yummy sauce and a bit of variety, everyone digs in.
Wednesday - Stir Fry with Pepper Steak
Winner winner when you find a budget lump of scotch fillet at the shops! For something different, try stir frying some vegetables with rice noodles (or not!) and grilling your steak to slice up on top.
It means you don't ruin (overcook) that beautiful cut of meat and can enjoy the caramelisation of the Garlic Pepper crust that forms.
Stir fry sauce can be kept simple or boosted up. Simple means chicken stock, Aroma Spice and Garlic Pepper or Chilli Garlic.
Boosted is something like this:
- 1/2 cup of tomato paste
- 1 tbspn rice wine or apple cider vinegar
- 1/3 cup organic Tamari
- 2 tspn rapadura sugar or honey
- 2 tspn Aroma Spice, Garlic Pepper or Chilli Garlic (or a combo)
- 1/2-1 cup chicken broth
Thursday - Taco Tuesday on Thursday
Thursdays for me are to clean out the fridge of random vegetables and make something simple, but ALWAYS tastes delish!
Inevitably that means Tex-Mex for us.
Tuesday nights roast lamb was big enough (deliberately) so it could be used Thursday when care factor is low.
Chop, add tomato paste or passata, simmer with Smokin' and salt and there's your Mexican base - add salad, an
easy GF wrap or two and you're set.
Oh and don't forget the
Salsa! Never buy salsa again.
Friday - Someone is cooking for ME!!
I'm getting the ultimate treat of someone else cooking for me! It's always good to be looked after no matter what is put on the plate. So grateful for the night of getting together with others as usual. TGIF!
