Monday - Roast Lamb & Veg
Ok it’s official, I do a roast most weeks and it’s now apparently become “Ho-Hum”. I find it the easiest and yummiest meal going round but it’s outstayed its welcome.
If you want to see how I let it roll read here and the best baked spuds here, and my gravy basics here, but I’m going to try pausing on the roast to see if I can make it “special” again. (sob, sigh).
Tuesday - Smokin’ Osso Bucco
This is my go-to formula for a slow cook, or a quick one if you use chicken! Any spice blend can apply here. To your chosen meat, add this (no browning required - time sucker)
- 600g jar of passata
- 2 tablespoons of Smokin’ (or your choice)
- 1-2 teaspoons unrefined salt (to taste if using a salt bomb)
- Mix straight in the pot, (or slow cooker) add your meat and bang in the oven
The longer you cook, the richer and more concentrated the sauce becomes. Serve with steamed veg & cauliflower or potato mash.
Wednesday - Old School Meatloaf
Great way to get extra veg into this already economical meal.
You can choose to line the pan with bacon for extra pizazz and put any leftover mix that doesn’t fit in the loaf pan into muffin for a quick lunch fix.
The sauce is the bomb! Use any blend is you want to change up the flavour.

Thursday - Smokin’ Chicken burritos or Bowls
Yup, Thursday is our Mexican night. With only chicken breasts and salad on hand, this was a really easy way to get our Mexican on.
Done in a flash when you have help because they want it in their bellies!!
While I cut up the chicken into long chunks, spiced them up and pan fried them, the kids chopped salad, made “our” guacamole, and a pot of Smokin’ Salsa
Friday - Chicken Wings & SP Fries!
Better than takeaway and a fraction of the cost.
Create your own Finger Licken food without leaving the house. Chicken wings are cheap and so is a potato!
Make your own aioli by following my Homemade Mayo recipe and adding a little extra garlic and dip away!
